Spaghetti and Meatballs

This is a very easy Spaghetti and Meatballs meal!

INGREDIENTS:

1 pound ground beef

1 egg

2 tablespoons parsley, chopped

3 cloves garlic, minced

½ cup breadcrumbs

½ cup grated parmesan cheese

1 teaspoon salt

 2 tablespoons olive oil

1 tablespoon minced garlic

1 (30 ounce) can tomato puree

2 tablespoons fresh basil, chopped

1 tablespoon fresh parsley, chopped

¼ teaspoon red pepper flakes

1 tablespoon sugar

Salt to taste

1 pound thick spaghetti noodles

 DIRECTIONS:

  1. Preheat oven to 400 degrees.
  2. In a medium bowl mix together the beef, egg, parsley, 3 cloves garlic, breadcrumbs, parmesan cheese and 1 teaspoon salt just until blended. Form into 1 inch balls and place on a rimmed sheet pan. Bake in a preheated oven for 15 minutes.
  3. In the meantime, in a large saucepan heat the oil and sauté the garlic just until golden. Add the tomato puree, basil, parsley, red pepper flakes, sugar and salt. Simmer. When the meatballs are done add to the sauce and simmer for 30 minutes.
  4. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Serve with sauce and meatballs.

Grilled Ham and Cheese Sandwich

INGREDIENTS:

8 slices of honey whole wheat bread (or a good quality country white)

¼ cup butter, softened

2 tablespoons Dijon mustard

2 tablespoons low fat mayonnaise

16 slices honey ham

16 slices Gruyere Swiss cheese

1 large tomato, sliced

 DIRECTIONS:

Spread one side of bread with butter. Place butter side down on a skillet preheated to medium. Spread Dijon on top of the bread. Then place a slice of cheese, 2 slices of ham, a tomato slice, and a slice of cheese. Spread one side of bread with mayo. Place mayo side down on top of the stack. Spread the top of bread with butter. Cook for 3 minutes on each side of sandwich, or until golden brown. Repeat 3 more times.

INGREDIENTS:

1 (8 ounce) package of elbow macaroni

¼ cup grated American cheese

½ cup grated sharp Cheddar cheese

¼ pound Brie cheese

2 tablespoons melted butter

½ cup milk

2 tablespoons Worcestershire sauce

1/8 teaspoon Tabasco sauce

½ teaspoon kosher salt

¼ teaspoon ground black pepper

1/8 teaspoon garlic powder1 (8 ounce) package of elbow macaroni

¼ cup grated American cheese

½ cup grated sharp Cheddar cheese

¼ pound Brie cheese

2 tablespoons melted butter

½ cup milk

2 tablespoons Worcestershire sauce

1/8 teaspoon Tabasco sauce

½ teaspoon kosher salt

¼ teaspoon ground black pepper

1/8 teaspoon garlic powder

2 tablespoons onion salt

Paprika

 DIRECTIONS:

  1. Cook macaroni according to package instructions and drain.
  2. In a medium bowl combine American and Cheddar cheeses.
  3. In a pot combine milk, butter and Brie cheese. Cook slowly until cheese melts, stirring constantly. Add Worcestershire sauce, Tabasco, salt, pepper, garlic powder and onion salt. Cook for 3 to 5 minutes.
  4. Pour the hot mixture into the bowl of cheese mixture; stir well and then pour into a greased glass baking dish. Sprinkle with paprika.
  5. Cover and bake at 325 degrees for 20 minutes. Uncover and bake for an additional 10 minutes more.
