Chicken Pesto Pasta

This is a very easy pasta meal, Chicken Pesto Pasta – under 30 minutes to make.

INGREDIENTS:

½ cup pignolis (pine nuts)

6 cloves garlic

4 cups loosely packed fresh basil leaves

1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

1 cup extra virgin olive oil

1 cup Parmesan cheese, freshly grated

1 pound dried spaghetti

1 boneless, skinless chicken breast, fully cooked and sliced

 DIRECTIONS:

  1. Place pine nuts in a food processer with the garlic and process for 15 seconds. Add the basil, salt, pepper and process. While the motor is runner stream in the olive oil, blending until incorporated. Add in the Parmesan cheese and pulse until combined.
  2. In the meantime, bring a large pot of salted water to a boil and cook pasta according to package directions and drained.
  3. When pasta is done toss with pesto. Sprinkle with additional Parmesan and top with cooked chicken.
